There are some Indian spices that many have heard of such as cumin, turmeric, garam masala. And then there are some Indian spices that have a mysteriousness around them. One such ingredient is amchur powder or mango powder. Amchur powder is made from unripe green mangoes and has a citrus flavor to it. Some people use it in place of lemon juice. Amchur powder is high in iron and can help with digestion. Just last week, I had someone mention that it was hard to find recipes that use this ingredient. So, for you, Louis, here is a simple recipe that will not only use the ingredient, but also allow you to taste the ingredient without being overpowered by other spices. Enjoy!
Amchur Turmeric Potatoes
Ingredients:
- 2 cups potatoes diced into 1-inch cubes
- 1 tsp. amchur powder (mango powder)
- 1 tsp. turmeric powder
- ½ tsp. salt
- 2 tbsp. vegetable oil.
Directions:
- Peel and cut potatoes into 1-inch cubes.
- Mix the amchur, turmeric, salt and 1 tablespoon of oil together in a small bowl. Then toss the mixture with the cubed potatoes.
- Heat frying pan with 1 tablespoon of oil the over medium heat.
- Next add the marinated potatoes to the pan. Lower heat to medium low to low. Cover and let cook for 8-10 minutes.
- Remove the lid and stir. Finish cooking uncovered for about 5 minutes or until potatoes are cooked through (fork tender).
- Serve hot. Optional garnish with dried methi leaves or chopped cilantro.
